I think most people think of salads as a dull, boring and uninspiring meal to eat and I would go as far as to say the average person probably has one or two different varieties of salad that they specialize in making. Even in a restaurant, you will often find only Ceasar, Greek and garden salad in the menu.

Salads can be low in calories but high in nutrients, the absolute perfect combination for most individuals leading a healthy life style.

So, lets start with a base, to make sure that you are getting an abundance of Vitamins, minerals and antioxidants then you need to get as many bright coloured vegetables in that salad as possible. Think bell peppers, red and white cabbage, tomato, carrot, beetroot, celery, cucumber, eggplant, zucchini, spinach, pumpkin, broccoli, red onion.

There are endless possibilities of different flavors that can now be introduced to the salad, you could sweeten it with raw honey or Stevia, add apple cider vinegar which can rid the body of bacteria, add lemon or lime to alkalise the digestive tract, garlic to work as an antiseptic cleanser, pumpkin seeds to eliminate parasites and then of course there is the option of adding all sorts of medicinal herbs and spices. Organic sea salt would be a good choice to season as it is mineral dense and combine it with a sprinkle of cayenne pepper as this will help to cleanse the bowels and speed up the metabolism.

If you prefer a more creamy pesto like sauce, you could simply soak some nuts and then blend them with herbs such as basil or parsley and add a touch of garlic. You could whip up a tomato salsa sauce using tomato, peppers, oregano, onion, garlic and chilli if you wanted to spice things up .

I always recommend to my clients to take a large lunch box and fill it with salad everyday and then have a couple of different pre-made dips or oil based dressing ready to go in little portable zip lock bags, this means you can snack on it throughout the day, giving your body a constant supply of nutrition.

If you are not a vegan then you could add grilled chicken breast, salmon, feta cheese or even eggs to the salad.
